Tri Tip Tacos With Habanero Mango Salsa

Ingredients

2 lbs tri-tip roast

10 Tortillas

3 Tbsp Kinder’s Woodfired Garlic BBQ Rub

1 Cup Kinder’s Exxxtra Hot BBQ Sauce

1 mango, peeled and diced

1/2 Cup red onion, diced

1/2 Cup red pepper, diced

1/2 Cup green onions, finely chopped

1 habanero pepper, finely diced

1 jalapeno, finely diced

1 lime, squeezed for juice

2 tsp. Kinder’s Tequila Lime BBQ Rub

Instructions

Step 1

Mix mango, red onion, red pepper, green onions, habanero pepper, jalapeno pepper, lime juice and Kinder’s Tequila Lime BBQ Rub into a mixing bowl.

Step 2

Let salsa rest for at least 30 minutes in refrigerator (for best results, let rest overnight in refrigerator).

Step 3

Season tri-tip thoroughly with Kinder’s Woodfired Garlic BBQ Rub. Set aside at room temperature until ready to cook.

Step 4

Preheat outdoor gas grill to high heat (450°F). If using a charcoal grill, arrange coals to one side of grill to create direct (high heat) and indirect (low) heating areas.

Step 5

Place tri-tip directly above flame and grill for 5-7 minutes on first side, then flip and grill for an additional 8 minutes to sear the meat and lock in juices.

Step 6

Remove from direct heat and place meat on indirect heat and continue cooking until internal temperature reaches 130-135°F (Medium Rare). Remove from grill and let rest for at least 10 minutes before slicing thinly against the grain.

Step 7

Heat tortillas.

Step 8

Fill tortillas with tri-tip and top with habanero mango salsa. Top with Kinder’s Exxxtra Hot BBQ Sauce and serve with lime wedges. Enjoy!
