3 zucchini
3 yellow squash
3 red bell pepper
24 stalks of asparagus
4 tablespoons olive oil
1 tablespoon Kinder’s The Blend seasonings
Step 1
Preheat oven to 375 degrees
Step 2
Slice zucchini and yellow squash into 1/3” thick slices
Step 3
Cut red bell pepper into 8th’s
Step 4
Trim ends off asparagus
Step 5
Place all vegetables in large mixing bowl and toss with olive oil
Step 6
Add Kinder’s The Blend Seasoning and toss until evenly coated
Step 7
Place vegetables on roasting pan and set on middle rack in oven
Step 8
Roast for 8-10 minutes, or until fork tender
Step 9
Portion out into 3 servings, which can be saved in the fridge for up to 3 days
