2 chicken breasts, boneless and skinless
1 tbsp. Tequila Lime Rub
2 tbsp. Mild BBQ Rub
1 tbsp. olive oil
8 flour tortillas
1 tbsp. olive oil
8 oz. mexican blend shredded cheese or favorite cheese
2 tomatoes, diced
3 green onions, thinly sliced
1 jalapeno pepper, thinly sliced
1 red chili pepper, thinly sliced
1 avocado
1/4 cup sour cream
1/8 cup cilantro, diced
Step 1
Preheat oven to 350°F.
Step 2
In a small bowl combine Tequila Lime & Mild BBQ Rub and mix thoroughly.
Step 3
Lay out chicken breasts and dust with rub mixture. Flip chicken and season other side.
Step 4
Grease baking sheet with half of the olive oil.
Step 5
Place chicken on baking sheet and leave uncovered. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 160 degrees.
Step 6
Place chicken on platter and let rest for 10 minutes.
Step 7
Cut into thin strips and set aside.
Step 8
Heat olive oil in a skillet on medium-high.
Step 9
Place one tortilla into the skillet and layer chicken, cheese, peppers, green onions, and tomatoes.
Step 10
Cook for 2-3 minutes. Flip once bottom tortilla is lightly browned.
Step 11
Cook for another 2-3 minutes or once tortilla is browned.
Step 12
Let cool and cut into pieces. Serve with lime wedges and sour cream. Enjoy!
