1.25 lbs. ground beef
1/2 red onion, chopped
2 garlic cloves, minced
1 cup cheddar cheese, shredded
2 cups Monterey jack, shredded
1 15.5 oz. can of black beans, drained
1 cup corn, drained
2 cups cherry tomatoes, cut in half
12 corn tortillas
1 tbsp. olive oil
3 tsp. Mild BBQ Rub
1 tsp. Tequila Lime BBQ Rub
1 cup tortilla chips, crushed
2 tbsp. cilantro for garnish
2 tbsp. sour cream
Step 1
Pre-heat oven to 375°F.
Step 2
Heat olive oil in a large skillet over medium heat.
Step 3
Add onion and cook for 5 minutes or until onions are translucent and tender. Stir in garlic, cook for 1 minute more.
Step 4
Add ground beef to skillet and cook until no longer pink about 6-8 minutes. Drain fat.
Step 5
Stir Mild BBQ Rub, Tequila Lime BBQ Rub, all but 1/4 cup of black beans, 1 1/2 cups cherry tomatoes, and corn.
Step 6
In a cast iron skillet or baking dish, spread out 4 tortillas on bottom of skillet.
Step 7
Spread 1/3 of beef mixture over tortillas. Add a 1/3 of cheeses on top of beef mixture, then repeat with another layer of tortillas, beef, and cheese. Then top again with tortillas, beef mixture, and cheese.
Step 8
Top with crushed tortilla chips, remaining beans and cheese.
Step 9
Bake uncovered for 15-20 minutes or until cheese is golden and bubbly.
Step 10
Garnish with remaining tomatoes, green onion, and cilantro. Serve with sour cream. Enjoy!
