Taco Blend Chorizo Queso


9 oz package pork chorizo

1/2 Cup half n half

1 lb velveeta cut in 1-2 inch pieces (half package)

1 Cup shredded monterey jack

1/2 Cup shredded mexican blend cheese

3/4 Cup Pale Ale beer

1 can Original Rotel (10oz)

1 Cup black beans (about 3/4 of a can)

2 Tbsp diced pimentos

2 tsp The Taco Blend

1/4 Cup diced cilantro

1 package of tater tots


Step 1

Preheat large pan or skillet over medium heat

Step 2

Cook chorizo about 3-5 minutes, stirring to break up

Step 3

Add half n half and beer, stir, and let slow simmer for about 3 minutes

Step 4

Reduce heat to low, add in all three cheeses and stir until all melted and well mixed.

Step 5

Once creamy texture is reached, mix in tomatoes, black beans, pimento, and taco blend until well incorporated, let cook for 5 minutes

Step 6

Stir in cilantro just before serving

Step 7

Prepare tater tots according to package instructions
