1 1/2 lbs. small potatoes
2 tsp. Prime Rib Rub
1 Tablespoon ghee or olive oil
fresh parsley or chives, chopped (optional)
Wash and dry potatoes.
Place into pot and cover with water.
Cook over high heat. Once water is boiling, cook for approximately 10 minutes until tender enough for a knife to cut through without too much resistance.
Preheat oven to 450.
While oven is preheating, drain the water from the potatoes and place lid back on pot to allow them to steam.
In a cast iron skillet (or roasting pan) add 1 Tablespoon ghee or olive oil.
Add potatoes to ghee and stir gently until evenly coated.
Add Kinder’s Prime Rib Rub and mix gently again.
Roast in oven for 20 minutes.
After 20 minutes, stir and return to oven (you want these to evenly brown.
Cook for another 20-25 minutes, stirring occasionally.
Let rest for a few minutes, serve hot or warm and garnish with fresh herbs as desired.
