Monte Cristo Sandwich

Ingredients

8 slices of apple-wood smoked bacon or your favorite thick-cut bacon

2 tsp. Kinder’s Brown Sugar BBQ Rub

8 slices of texas toast

4 eggs

2 tsp. ground cinnamon

1/2 Cup milk

4 slices cheddar cheese

8 slices cooked ham

Instructions

Step 1

Preheat oven to 375°F.

Step 2

Line a large rimmed baking sheet with aluminum foil.

Step 3

Place a large cooling rack on foil lined baking sheet.

Step 4

Arrange bacon slices in single layer on rack.

Step 5

Coat evenly to one side of bacon with Kinder’s Brown Sugar Rub.

Step 6

Bake until bacon is crisp, about 20-25 minutes. Transfer to paper towels to drain and set aside.

Step 7

While the bacon is cooking, mix the 4 eggs, cinnamon and milk together in a medium size mixing bowl.

Step 8

Warm a skillet on the stove top on medium high heat.

Step 9

Dip both sides the bread in the egg mixture and cook in the skillet until browned. Approximately 2-4 minutes a side. Continue with cooking each piece of bread.

Step 10

While the bread is still warm, begin to build the sandwich by layering cheese, ham and a generous portion of Kinder’s Brown Sugar Bacon.

Step 11

Serve warm with a side of your favorite jelly. Enjoy!
