1 cup marinara sauce
2 medium zucchini, chopped
4 pieces cod fillet, 6 oz. pieces
2 tsp. Kinder’s Mediterranean Seasoning
1/4 tsp. crushed red pepper
1 tbsp. olive oil
2 garlic cloves, chopped
1 pound fresh spinach
Sprinkle the cod fillets with half of the Kinder’s Mediterranean Seasoning and let sit for 5 to 10 minutes.
In a large skillet, combine the marinara sauce and zucchini. Simmer on medium heat.
Add the cod fillets to the simmering sauce and cover with a lid. Cook for an additional 7 to 9 minutes, or until the cod is opaque throughout.
In a large saucepan, heat the olive oil on medium heat. Once the oil begins to smoke slightly, add the garlic and red pepper flakes. Cook for 1 to 2 minutes, until fragrant.
Add the spinach and rest of the Kinder’s Mediterranean Seasoning to the saucepan. Cover and cook for 5 to 7 minutes, or until the spinach wilts, stirring occasionally.
Divide the spinach and sauce between four serving plates. Top with a piece of Kinder’s Mediterranean Cod and Enjoy!
