25 red potatoes, washed
3 cups pork, cooked and pulled
1 bottle Kinder’s Organic Mild BBQ Sauce
8 slices of bacon, cooked and diced
4 oz. sour cream
6 green onions, diced
2 cups sharp cheddar cheese, shredded
Step 1
Fill a large pot with water and add potatoes. Keep potatoes in one single layer and cover by about 1-2 inches of water. Cook at medium heat on the stove top for approximately 10-15 minutes, or until you can insert a fork easily into one of the potatoes. Note: You do not want the potatoes too soft where the skins will fall apart.
Step 2
Remove potatoes from water and set on cutting board to cool.
Step 3
Preheat oven to 450ºF
Step 4
Slice the potatoes in half, and with a small spoon, scoop out half of the inside. Be sure to leave a little of the potato inside, as it will help keep the potato skin together and provide some nice texture.
Step 5
Place the potato skins, skin side down on a baking sheet and place in the oven for 15-20 minutes, or until the skins are slightly crispy.
Step 6
Meanwhile, combine pulled pork and Kinder’s Organic Mild BBQ Sauce in saucepan and simmer on low until pork is heated through and warm.
