1 lb shrimp, peeled and deveined
2 tbsp olive oil
1 white onion, sliced
2 bell pepper, deseeded and sliced
1 packet Kinder’s The Fajita Blend Seasoning
1/4 cup water
8 flour tortillas, fajita style
4 tbsp sour cream
1 1/2 cup cheese, shredded
1 lime, wedged
On medium-high heat, add olive oil into skillet and let warm for 1 minute.
Add shrimp into pan and cook for 4-5 minutes, stirring halfway through.
Once shrimp begin to brown, add onion, Kinder’s The Fajita Blend Seasoning and ¼ cup of water, Cook for an additional 3 minutes, stirring frequently.
Add bell peppers into pan and stir. Cook for an additional 2-3 minutes. NOTE: For softer veggies, cover skillet with lid once adding bell peppers and cook for an additional 3 minutes.
Fill tortillas with shrimp & veggie fajita mixture and add your favorite toppings. Enjoy!
