Kinder’s Baked Meatball Parmesan


1 lb ground pork

1 lb ground beef (80/20 recommended)

2 eggs

1/2 Cup crushed pork rinds

1 packet Kinder’s Garlic & Herb Seasoning & Wet Rub

5 large basil leaves

12oz log fresh mozzarella (unsliced)

2 Cups of your favorite low-carb marinara


Step 1

In a large mixing bowl combine beef, pork, eggs, pork crumbs and seasoning until well blended.

Step 2

Shape into 20 meatballs roughly the size of a golf ball, or enough to cover the bottom of a 9×12 baking dish (or similar size).

Step 3

Arrange meatballs in single layer, and top with 2 Cups marinara. May require less, just make sure meatballs are covered.

Step 4

Cut thin slices of the fresh mozzarella and place on top of each meatball.

Step 5

Bake uncovered at 400 degrees for 30-35 minutes, or until cheese is melted and internal temp of the meatballs registers 150 degrees.

Step 6

While meatballs bake, julienne the basil leaves and use to garnish the top of the dish once out of the oven.

Step 7

Serve with deep spoon to capture enough sauce with every meatball, about four per serving. Enjoy!
