Keto Smoked Red Jalapeno BBQ Double Pork Nachos


5 oz. pork rinds, or enough to cover a 17×11 baking sheet

1 lb pulled pork without sauce

½ Cup white onion, diced

2 jalapeños, seeded and diced

½ Cup tomatoes, chopped

1 Cup cilantro, chopped

1 Cup Monterey jack cheese, shredded

  1. Preheat oven to 400°.
  2. Warm pulled pork in a saucepan on medium heat. Add half of the BBQ sauce and stir. Set aside once warm.
  3. Cover baking sheet with foil, spread pork rinds in a single layer. Top with cheese and pulled pork, place in oven until cheese melts, about 8-10 minutes.
  4. Top with other toppings and finish off with a drizzle of BBQ sauce.
