5 oz. pork rinds, or enough to cover a 17×11 baking sheet
1 lb pulled pork without sauce
1/2 cup white onion, diced
2 jalapeños, seeded and diced
1/2 cup tomatoes, chopped
1 cup cilantro, chopped
1 cup Monterey jack cheese, shredded
Preheat oven to 400°.
Warm pulled pork in a sauce pan on medium heat. Add half of the BBQ sauce and stir. Set aside once warm.
Cover baking sheet with foil, spread pork rinds in a single layer. Top with cheese and pulled pork, place in oven until cheese melts, about 8-10 minutes.
Top with other toppings and finish off with a drizzle of BBQ sauce.
