Keto Friendly BBQ Bacon Meatloaf

Ingredients

1 lb ground beef (we like 85% lean)

2 tsp Kinder’s The Blend Seasoning

½ Cup almond flour

2 eggs

¼ Cup diced yellow onion

¼ Cup Zero Sugar Original BBQ Sauce

½ Cup shredded cheese, such as cheddar and jack

2 oz. cooked bacon, chopped (about 8 slices)

Instructions
  1. Preheat oven to 350 F.
  2. In a large bowl, add the beef, onion, almond flour, eggs, 2 Tbsp Kinder’s Zero Sugar BBQ Sauce, 2 tsp Kinder’s The Blend Seasoning, ¼ Cup cheese and bacon (optional). Mix until combined.
  3. Spray loaf pan with oil. Place the mixture into pan. Pat down evenly. (It helps to wet your hands to create a smooth even surface.)
  4. Cover pan with foil and cook in oven for 35-40 minutes.
  5. Remove from the oven and carefully remove foil, let rest for 2 minutes.
  6. Spread remaining BBQ sauce over the top and cover with remaining cheese.
  7. Place back in the oven uncovered until the cheese is melted.
  8. Pull from oven and let rest for 5-10 minutes. (garnish with parsley if desired)
  9. Once meatloaf is cool enough to handle, slice and serve warm.
