Japanese BBQ Tsukune

Ingredients

1 pound ground chicken (50/50 light and dark meat)

2 egg yolks

2 scallions, chopped finely

3 tablespoons Kinder’s Japanese BBQ Rub

1/2 cup panko bread crumbs

1/4 cup milk

3 tablespoons Kinder’s Mild BBQ Sauce

Instructions
  1. Soak breadcrumbs in milk. Season ground chicken with Kinder’s Japanese BBQ Seasoning.  
  2. Add in soaked breadcrumbs, egg yolk, and chopped scallion and utilizing hands kneed and squeeze mixture until well combined.  
  3. Spray parchment with pan spray and utilizing 1 oz portion scoop (use wet spoons if you do not have a scoop) portion meatballs onto tray.  
  4. Spray grill with pan spray, and place meatballs on indirect heat, and grill 3-5 minutes per side. Cook until internal temperature is 165F. You can bake at 375F for 12-15 minutes as well.  
  5. Toss in Mild BBQ sauce and serve.
