Grilled Spring Lamb Rack


2 1lb lamb racks

2 Tbsp olive oil

3 Tbsp Kinder’s The Blend


Step 1

Rub lamb racks with olive oil and season evenly with The Blend. Allow seasoning to penetrate for 30 minutes.

Step 2

Grill fat side down over indirect heat for approximately 2-3 minutes to render and caramelize fat cap.

Step 3

Cooking fat side up place over indirect heat and continue cooking for 15 – 20 minutes or,

Step 4

Place in oven on baking sheet fat side up for remaining 20 minutes until internal is 125°F.

Step 5

Allow to rest for 10 minutes before cutting.
