1 pound ground chicken (50/50 dark and white meat)
2 egg yolks
2 scallions, sliced finely
1.5 tablespoons Kinder’s Buttery Poultry Blend
1/2 cup breadcrumbs
1/4 cup whole milk
Kinder’s Roasted Garlic BBQ Sauce
Soak breadcrumbs in milk. Season ground chicken with buttery poultry seasoning.
Add in soaked breadcrumbs, egg yolk, and chopped scallion and utilizing hands kneed and squeeze mixture until well combined.
Spray parchement with pan spray, and utilizing 1 oz portion scoop (use wet spoons if you do not have a scoop) portion meatballs onto tray.
Spray grill with pan spray, and place meatballs on indirect heat, and grill 3-5 minutes per side. Cook until internal temperature is 165F. You can bake at 375F for 12-15 minutes as well.
Toss in BBQ sauce to coat, and serve.
