1 pork shoulder (about 9 lbs)
2 tbsp Kinder’s All Purpose
3 cups woodchips/chunks
Step 1
Season pork shoulder liberally with Kinder’s All Purpose
Step 2
Set up grill/smoker for indirect cooking aiming for and ambient temp of 250-275
Step 3
Place shoulder on grill away from heat, ideally with a water pan below if possible with 1 inch of water. (this will help regulate temp/humidity as well as increase smoke ring)
Step 4
Cook for 2-3 hours on grill, replacing wood chips/chunks everytime smoke stops or slows.
Step 5
Once good bark has formed, remove shoulder from grill/smoker and place in half pan or large baking dish, and cover with foil.
Step 6
Return to grill/smoker or place in oven and continue to cook at 275 until pork is fork tender with no resisitance, internal temp should be 200
