Crunchy Baked Chicken Tacos


2 Cups cooked chicken, shredded

1/2 onion, diced

1 10 oz. can diced tomatoes and green chiles

1 Cup salsa

12 hard shell tacos

1 Cup mexican blend cheese, shredded

1 tsp. Kinder’s Tequila Lime BBQ Rub

2 tsp. Kinder’s Mild BBQ Rub

2 tsp. Kinder’s Woodfired Garlic Rub

1 Tbsp. olive oil

1/4 Cup sour cream

1/4 Cup guacamole

2 Tbsp. cilantro, chopped


Step 1

Preheat oven to 400ºF. Line a baking dish with foil or parchment paper.

Step 2

In a large skillet, heat oil over medium-high heat.

Step 3

Add the onions and cook 3-5 minutes or until lightly golden.

Step 4

Add diced tomatoes and green chilis, chicken, Tequila Lime BBQ Rub, Mild BBQ Rub & Woodfired Garlic Rub. Cook for 3-5 minutes, stirring occasionally until heated through.

Step 5

Line taco shells in baking dish. Spoon chicken mixture into each taco shell. Sprinkle top with cheese and bake for 12-15 minutes until cheese is golden and bubbly. Remove from oven.

Step 6

Serve with salsa, guacamole and sour cream. Enjoy.
