2 Cups cherry tomatoes, cut in half lengthwise

15 oz can sweet corn

15 oz can black eyed peas

.5 red bell pepper diced

.5 green bell pepper diced

1 jalapeno, deseeded diced

1/3 Cup olive oil

2 Tbsp lime juice

2 Tbsp red wine vinegar

1 Tbsp Woodfired Garlic

(Optional) Chopped cilantro

(Optional ) Diced avocado


Step 1

Mix olive oil, lime juice, vinegar, and seasoning to create a vinegrette, set aside

Step 2

Dice all ingredients, combine in a large mixing bowl, add dressing and mix well.
