
Ingredients
2 Cups cherry tomatoes, cut in half lengthwise
15 oz can sweet corn
15 oz can black eyed peas
½ red bell pepper, diced
½ green bell pepper, diced
1 jalapeño, deseeded diced
⅓ Cup olive oil
2 Tbsp lime juice
2 Tbsp red wine vinegar
Optional
Chopped cilantro
Diced avocado
Instructions
Mix olive oil, lime juice, vinegar, and seasoning to create a vinaigrette, set aside
Dice all ingredients, combine in a large mixing bowl, add dressing and mix well.
