1 bag tater tots, frozen
8 slices apple-wood smoked bacon or your favorite thick cut bacon
1 package breakfast sausage
2 tbsp. Brown Sugar Rub
1 tbsp. Buttery Steakhouse Seasoning
8 oz. cheddar cheese, shredded
3 green onions, diced
Step 1
Preheat oven to 450 degrees.
Step 2
Spread tater tots out into a single layer on a baking sheet. Season tater tots with Brown Sugar Rub.
Step 3
Place in oven and cook tater tots for 20-25 minutes, or until golden brown. Pull tater tots from oven and set aside.
Step 4
Lower oven temperature 375ºF.
Step 5
Line a large rimmed baking sheet with foil. Place a large cooling rack on foil lined baking sheet.
Step 6
Arrange bacon slices in a single layer on the baking rack and coat evenly with Brown Sugar Rub.
Step 7
Bake until bacon is crisp, about 20-25 minutes. Transfer to paper towels to drain excess grease.
Step 8
Place a skillet on the stove at medium high heat. Cook breakfast sausages for 12-16 minutes or until cooked through and browned. Remove from skillet and transfer to paper towels to drain excess grease.
Step 9
Add eggs to the same skillet. Do not remove the left over grease from the sausages, as this will provide a lubricant for the eggs.
Step 10
Season the tops of the eggs with Buttery Steakhouse Seasoning.
Step 11
Cover skillet with a tight lid or foil. Let cook for 2-3 minutes, until the whites are fully set but the yolks are still runny or until desired doneness.
Step 12
Drop oven temperature to 325ºF.
Step 13
Cut bacon and sausage into bite size pieces.
Step 14
In a separate skillet, layer tater tots, bacon, sausage, and cheese.
Step 15
Place in oven for 4-8 minutes, or until cheese is melted.
Step 16
Remove from oven and place eggs on top. Garnish with green onions and enjoy!
