1-2 lb. Pork Tenderloin
2 peaches, cored and diced
1 fuji apple, peeled, cored and diced
1 jalapeño , seeded and finely diced
1/2 red bell pepper, seeded and diced
1/2 medium red onion, finely diced
1/3 cup of fresh lime juice
1/3 cup of cilantro, chopped
1 tbsp. of honey
1/4 tsp. of black pepper
1/4 tsp. of salt
1 bottle of Brown Sugar BBQ Rub
1 bottle of Roasted Garlic BBQ Sauce
Step 1
In a large mixing bowl, mix together peaches, apple, jalapeño, red bell pepper, red onion, lime juice, cilantro, and honey. Season to taste with salt and pepper. Refrigerate until ready to serve.
Step 2
Pre-heat grill to medium-high heat. (Grill Method)
Step 3
Coat all sides of pork tenderloin with Brown Sugar BBQ Rub.
Step 4
Place tenderloin over direct heat. Sear until brown on all sides and move tenderloin to indirect heat.
Step 5
Continue to grill for 10-15min or until pork reaches an internal temperature of 140°F.
Step 6
Brush tenderloin with Roasted Garlic BBQ Sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
Step 7
Remove from grill and let rest for 10 minutes before slicing and serving with Peach Apple Salsa.
Step 8
Pre-heat oven 400°F. (Oven Method)
Step 9
Heat olive oil in skillet on medium-high heat.
Step 10
Saute until brown on all sides.
Step 11
Place tenderloin in baking dish, cover and bake for 15-20 minutes or until pork reaches an internal temperature of 140°F.
Step 12
Brush tenderloin with Roasted Garlic BBQ Sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
Step 13
Remove from oven and let rest for 10 minutes before slicing and serving.
Step 14
Plate and serve with Peach Apple Salsa. Enjoy!
