4-6 chicken breast (thinly sliced)
1 1/2 tbsp Kinder’s Organic Roasted Garlic Salt
1/2 cup balsamic vinegar
1/3 cup red onion, sliced
1 tbsp honey
8 oz fresh mozzarella
2 tbsp olive oil
1 cup cherry tomatoes, halved
1/3 cup fresh basil, sliced
Season chicken with Kinder’s Organic Roasted Garlic Salt.
Heat 2 tbsp of olive oil over medium-high heat in a cast-iron pan or large skillet.
Add chicken to pan and sear 4-5 minutes until golden. Flip chicken and sear for 4-5 minutes until golden brown and chicken is cooked through and no longer pink in center or until internal temperature reaches 165ºF. Remove chicken to plate.
Add onions to skillet and saute until translucent.
Add in balsamic vinegar and honey, stir to combine. Reduce heat to medium-low and let balsamic simmer for another 3-4 minutes, stirring the entire time.
Add chicken back to skillet and place one slice of mozzarella on each chicken. Cover and cook on medium-low to low for another 3-5 minutes or until cheese is melted. Remove from heat.
Top chicken with tomatoes and fresh basil. Serve and enjoy!
