Baked Avocados & Eggs


4 eggs

2 avocados, halved and pitted

1/2 Cup Brown Sugar Bacon, crumbled

2 tsp. Cali Blackened Rub

  1. Preheat oven to 425ºF.
  2. Arrange avocado halves in a baking dish, resting them along the edge to ensure they won’t tip over during cooking.
  3. Gently crack egg and place into avocado center (be sure to keep yolk intact).
  4. Season each with Cali’s Blackened Rub.
  5. Place baking dish in oven and cook for 15 minutes, or until eggs are cooked thoroughly.
  6. Top with brown sugar bacon crumbles and enjoy!
