Avocado Lime Corn Salad


5 ears corn

3 Tbsp Kinder’s Avocado Lime Rub

1/2 pt cherry tomatoes, cut in half

1/2 Cup fresh chopped cilantro

1/2 Cup Cotija cheese

Juice of 1 lime

5 Tbsp olive oil

  1. Oil corn cobs with 2 Tbsp of the oil and season with avocado lime seasoning. 
  2. Grill over medium heat for 2-3 minutes per side, assuming there are “4” sides to the corn cob, turn often to avoid burning and develop nice caramelization. 
  3. Cool, and utilizing a knife, cut kernels off cob.  
  4. Place cut kernels into a large bowl.  
  5. Add remaining oil, tomatoes, cilantro, Cotija cheese, and lime juice and toss to distribute.
  6. Enjoy
