Oil corn cobs with 2 tablespoons of the oil and season with avocado lime seasoning.
Grill over medium heat for 2-3 minutes per side, assuming there are “4” sides to the corn cob, turn often to avoid burning and develop nice caramelization.
Cool, and utilizing a knife, cut kernels off cob.
Place cut kernels into a large bowl.
Add remaining oil, tomatoes, cilantro, Cotija cheese, and lime juice and toss to distribute.
