Avocado Lime Baja Style Fish Tacos

Ingredients

2 lb rock cod filets

4 Tbsp Kinder’s Avocado Lime Rub

1/2 Cup all purpose flour

1/2 Cup cornstarch

1 1/2 Cups light beer

Salt & Pepper to taste

Instructions
  1. Portion fish into strips approximately 3 “long.  
  2. Season evenly with Kinder’s Avocado Lime Rub, set aside.  
  3. Preheat deep fryer to 375°F. 
  4. Prepare beer batter by whisking together all the dry ingredients.  
  5. Add in the beer and adjust as needed. The batter should be the consistency of pancake batter.  
  6. Place portions into batter and pull out 1 at a time. Allow batter to run off, fish strip should be evenly coated.  
  7. Fry for 3-4 minutes or until golden brown and crispy.  
  8. Garnish on tortilla with shaved cabbage, red onion, and Baja sauce.
