Lemon Herb Pasta Salad

1 pound corkscrew pasta
1 pound asparagus
1 pint cherry tomatoes, halved
7 ounces crumbled feta cheese
½ cup Lemon Herb Dressing (see recipe)
Boil a large pot of salted water over high heat. Add the pasta and cook until al dente. Drain, rinse and set aside.
Boil another large pot of salted water and add the asparagus. Cook about 3 minutes, until bright green and slightly tender. Shock in a bowl of icy cold water. Remove from the water and cut into small pieces.
In a large bowl, combine the pasta, asparagus, tomatoes, feta, and the lemon herb dressing. Toss with tongs to coat the pasta. Taste and add additional lemon herb seasoning, if needed.
- Add additional veggies, such as zucchini, to the pasta
- Cube up mozzarella in place of the feta cheese
- Great zesty summer side dish
