Ball Tip Oven Stew

2 lbs. Kinder’s Ball Tip, cut in 1 ½ “ cubes
2 medium onions, diced
3 ribs of celery, diced
4 medium size carrots, sliced
1 cup tomato juice or V8
1/3 cup quick cooking tapioca
1T sugar
1T salt (or less)
¼ tsp. pepper
½ tsp. sweet basil
2 medium potatoes, cubed


Combine all ingredients except potatoes in a 2 ½ qt casserole pan. Cover and bake in a 300*F oven for 2 ½ hours. Mix potatoes into stew and bake uncovered 1 hour longer. Stir occasionally (you may have to add a little water or juice if it gets too thick.)
